The past month, I was a little bored of my traditional salad and decided it was time to try something new. Enter Collard Greens! Collard greens are from the Brassica family, the species which also contains vegetables including cabbage and broccoli. They work well in soups, stews and stir-frys, and even better as a wrap. I am officially obsessed with Collard Greens. Every meal I eat, I think, hmmmm I wonder if I can make that into a wrap. It's really quite simple, and they taste A-M-A-Z-I-N-G!
- 2 teaspoons garlic powder
- 1 teaspoon sea salt
- 4 teaspoons onion powder
- 1 teaspoon ground black pepper
- 6 teaspoons paprika
- 8 teaspoons chili powder
- 2 teaspoons cumin
- 1/2 teaspoon cayenne pepper (more or less depending on your desired spice level)
*Mix all seasoning in a small mason jar. Store for later use.
- 1 lb ground chicken
- 2 tbsp. taco seasoning
- 1 cup Basmati Rice (cooked according to package)
- Organic Corn, 1 cup (or cut corn of 1 cob)
- Cherry Tomato's, cut
- Pickled jalapenos, chopped
- Organic Greek Yogurt
- Cheese (Optional)
- Collard Greens
*Brown the chicken with the taco seasoning. Trim down the spine of the collard greens so that they can easily fold. Place ingredients on the collard and fold into a wrap. Enjoy!!!!
