Child Approved Meatloaf
This super delicious meatloaf is not just easy to make, it tastes awesome too!
It's so full of healthy vegetables that it can be a meal all by itself, or served with a yummy side salad. Here I've paired it with some antioxidant rich cilantro and drizzled it with some sweet chili sauce, but you can really eat it alone. My 19 month old daughter loves this dish and the best part, is that you can freeze it in mini loaf pans so you are ready for those days when you are so busy you just don't have time to get into the kitchen.
The recipe has been adapted from one of my favorite infant/toddler books, Sprout Right, by Lianne Phillipson-Webb. If you haven't yet purchased it, and you have children under the age of 2 at home, I suggest you get out and buy a copy. It's a purchase you will definitely not regret.
Here is my recipe:
1 ½ pounds ground chicken
½ Cup red pepper
½ Cup yellow pepper
½ Cup Kale
½ Cup Parsley
3 Carrots
1 Zucchini
1 onion
3 cloves garlic, minced
1 ½ Cups Quinoa Flakes (or 1 cup breadcrumbs)
1 egg
1 tsp herbamere**
1) Chop all vegetables very fine in your food processor. You can use a knife, but the processor will cut preparation time to a minimum.
2) Combine all ingredients in a large bowl and mix thoroughly. If the mixture is too moist, it will not hold shape. In that case, add more quinoa flakes or breadcrumbs.
3) Pat mixture into 3 greased mini loaf pans. I like to grease my pans with coconut oil, but butter or olive oil will do fine.
4) Bake for 30 minutes at 350oF. Internal temperature should reach 165oF. Note: If using a large loaf pan, cooking time will have to be increased to an hour and a half.
**Herbamare replaces conventional table salt. Herbamere is free from MSG, preservatives and artificial flavors. It is made of a blend of herbs including celery, leek, watercress, onions, chives, parsley, lovage, garlic, basil, marjoram, rosemary, thyme, and kelp, all organically grown. It can be added during or after cooking to enhance taste! You can buy it at most supermarkets in the organic section.
