Quinoa Chickpea Tabouleh
4 c water
2 c uncooked quinoa
2 c cooked chickpeas
1 c cherry tomatoes, diced
1 cucumber, diced
1/4 Spanish onion, finely chopped
2 carrots, grated
1 c fresh parsley, finely chopped
1/2 each yellow and red pepper
1-2 cloves garlic, chopped
Shrimp (cooked, peeled & deveined)
1/4 c olive oil
1/4 c flaxseed oil (optional)
1/2 tsp sea salt
1/4 c apple cider vinegar
1 tsp mustard
Bring water to boil in saucepan. Add quinoa (that has been rinsed well) and pinch of sea salt. Reduce heat to low, cover and simmer for 15 minutes. Let it cool before adding the veggies!
Add chopped veggies and chickpeas to the cooled quinoa. Mix up the dressing, add and enjoy.
Combine rest of ingredients in large bowl.
Stir in cooled quinoa and chickpeas.
